Fashionable brasserie Ruby Eating is now open within the Melbourne CBD – hospitality


Operator Venues’ Valerie Fong and Randy Dhamanhuri (Operator25, Makan Restaurant, Middletown Cafe) have teamed up with former Cumulus Head Chef James Cornwall to launch Ruby Eating within the Melbourne CBD.

The all-day venue is impressed by the theatreland brasseries of New York and London, providing breakfast throughout to late-night choices.
