Microdistillery opens in Sydney’s Rouse Hill – hospitality


Sydney’s Rouse Hill is gearing as much as swing open the doorways to its first domestically owned microdistillery.

Hills Distilling Co. welcomes the general public from 15 March with its personal line of spirits masking gin, vodka, and Australian white malt all made with domestically sourced elements.

The venue is the work of Momento Hospitality which has a pub-centric portfolio together with The Governor Resort, Hillside Resort, and the soon-to-open Oran Park Resort.

The distillery has been break up into a number of areas together with a ground-floor cellar door, seating space, retail space, and tasting desk, with tanks and barrels positioned on the mezzanine stage.

Company can attend a variety of various masterclasses together with excursions of the manufacturing house and gin-making every led by the staff of in-house distillers.

As for meals, there are two predominant choices; cheese and charcuterie from Alex Keene (Sarinos) or dumplings from Sebastian Tan (Jinja).

Drinks will showcase the distillery’s personal merchandise together with Article No.9 gin made with cascara, coriander seeds, pepper berries, and loads of juniper in addition to its Australian white malt product, which is a collaborative effort with Australian Brewing Co.

The venue is open for appointment-only gin-making courses and excursions from 3-6pm on Thursdays, with the primary cellar door open on Fridays from 3-6pm.
