Matt Whiley’s Re has returned to the bar panorama due to a partnership with Public Hospitality.
The low-waste Sydney institution will reopen in The Norfolk in Redfern subsequent month after exiting its South Eveleigh location, with Whiley describing it as “the best transfer for the bar”.

The bar, which ranked 46 on The 2021 World’s 50 Greatest Bars record, will take over the previous web site of La Salut, with the area present process a renovation to match Re’s sustainable ethos in addition to incorporate distillery gear and cocktail testing areas.
Re’s cocktails will largely be made with kitchen waste from Public’s rising portfolio of venues, with drinks already in growth from produce rediverted from Perhaps Sammy, Derrel’s, and Ricos Tacos.
The plan is for every Public venue to have its personal signature cocktail at Re, with Whiley working carefully with Artistic Culinary Director Clayton Wells to mix each bar and culinary parts.
The bartender may also oversee the broader group’s waste-management processes with the purpose of softening its present footprint.
“It’s nice to assist Public cut back their influence … as I imagine this means of minimising waste is one thing we must be embracing throughout the trade,” says Whiley.
