Former Aria expertise joins Perhaps Sammy as head chef – hospitality


Aria alumni Andrea Castagnola has been appointed as head chef for Sydney cocktail bar Perhaps Sammy.

Castagnola’s menu is now working with a spread of snacks designed to pair with the venue’s award-winning cocktails.

A few of the dishes on Castagnola’s first menu embrace a beef tartare on a parmesan tartlet with inexperienced peppercorn sauce and duck egg mayonnaise; kingfish tartare on a nori cracker with grapefruit and kombu dressing; plus mini lobster rolls.
